Fresh baked homemade biscuits
Homemade (reduced fat) biscuits this morning! 2 cups of self-rising flour, a couple ounces of apple sauce, and 3 tablespoons of butter (cold, cut into small cubes). I use the apple sauce instead of extra shortening; you do not taste the apple, but it cuts down a lot on the bad fat.
Mix in a large bowl, adding milk (I used 1% fat, lactose free) and knead by hand, until soft and gloopy.
Spill out onto a lightly flour'd surface, and work it like a pizza dough into a roundish shape. Fold over, and spread. And then again. You can use a rolling pin, but you really do not have to.
Cut into rounds with whatever round thing you have on hand (I used an egg ring). You want the raw biscuits around an inch thick, at least.
Bake on a cookie sheet at 400 degrees, until golden brown.
