How we safely taste the seasonings of raw meat mixtures

It is difficult, if not impossible, to properly season raw meat prior to cooking without a taste test. But we all know the dangers of sampling raw meats, especially ground meats for meatballs or meatloaf, sliced cuts for jerky, or any kind of poultry. There is, however, a simple solution.

Toss a spoonful of the seasoned, but still raw meat mixture onto a sizzling hot skillet. You don’t need to add any cooking oil (which will taint the flavor). Give it a few moments, and now the mixture is cooked and safe to sample. This allows you to judge the current seasonings, and make adjustments to suit your taste.
