South Carolina style Peach cobbler

My wife Gaye got this recipe from our friend Sylvia D. Super delicious and easy to make.

Thoroughly drain 4 cups of canned, sliced peaches. Toss in a bowl with 1/2 cup sugar, a dash of almond extract, a dash of cinnamon & nutmeg.

In another bowl, combine 3/4 cup of self-rising flour; (or regular all purpose flour along with 2 teaspoons baking power and a pinch of salt) with 1/2 cup of sugar. Mix with 3/4 cup of milk and a dash of vanilla extract.

Pour 6 tablespoons (1/3 cup, or 1.5 quarter sticks) melted butter into a 2-quart baking dish. Pour your batter into the dish over the butter. Then gently top with the peach mixture.

Bake at 350 degrees for 50-60 minutes, or until golden brown. Note that in a cobbler, the "crust topping" rises from the bottom up, to nicely mingle with the fruit.
